Hot Apple Cider Mix Gifts in a Bag

With Christmas just around the corner & the end of school coming in 1 week. We are all looking for something special as a Christmas gift for our child’s teacher. I like to give something useful & a lot of times something that the kids can make so it makes it more special to both teacher & child. This year my son has moved up to middle school. So that means he now has 8 teachers rather than 2 that he had last year.

Last year we made gifts in a jar mix that is listed earlier in my articles on the blog from friendship brownie mix gifts in a jar book bake sale favorites. That not hard to do with 2 teachers but now with 8 teachers my son has choose a recipe from Gifts in a Bag book Hot Drinks the recipe is hot apple cider mix.

It cost a lot less to make the item from these books when you are making several of them.

The recipe for this mix is

2 T. presweetened lemonaid mix

2 T. sugar

1 tsp. ground cinnamon

1/2 tsp ground nutmeg

Combine all ingredents and stir until well blended. Place in a 3″x4″ ziploc bag and seal.

Attach a gift tag with the directions on how to prepare the cider.

Directions for the cider:

1 tsp. hot apple cider mix

8 oz. hot apple juice

cinnamon stick, (optional)

Place the hot apple cider mix in a mug. Pour hot apple juice over the mixture. Stir until the mix is completely dissolved. If desired garnish with a cinnamon stick. One package of Hot apple cider mix makes 16 servings when added to 1 gallon of hot apple juice.

To make it look nicer we will place the bag in a mug for each teacher you can get a nice mug for a dollar at different dollar store across the country.

This make a nice Christmas gift for the teachers in your child’s life or your life. This can be given to school teachers, Sunday school teachers, scout leaders. or just have several bags made up for the guest that drops by for the holidays.

Diabetic Thanksgiving Dessert Recipes

Angel Food Delight

This recipe can be made for diabetics or regular. This makes a great sugar free recipe & very quick & easy dessert that you can make a day before & have in the refrigerator. Just because you have diabetes doesn’t mean that you can’t enjoy dessert with the rest of the family. Make Angel food delight for all your family members to enjoy. My family will eat this without being able to tell if it is sugar free or not.

The sugar free version of Angel food delight:

1 sugar free Angel food cake baked (Break it into bite size pieces.)

1- 15oz. can crushed pineapple

1- 8oz bowl of sugar free whipped topping

1 small box sugar free vanilla pudding ( make as directed on box.)

To start make sure the pudding is cooled, & drain the pineapple. Next break the Angel food cake into bite size pieces. Then in a large bowl mix the sugar free pudding, drained pineapple & sugar free whipped topping. Stir all ingredients together that they are blended well. Now fold in the Angel food cake to the mixture so that it is well mixed. Place the mixture in the refrigerator overnight for a great sugar free dessert for your Thanksgiving Dinner. Now the diabetics in the family can enjoy dessert without the problems of a higher blood sugar reading.

For the regular version:

1 Angel food cake

The New Traditional Turkey Stuffing Recipe

I love this one if you try it please let me know I’m not cooking dinner this Thanksgiving. I will be going to see my son in North Carolina if the Army doesn’t let him come home.

I don’t know if this is one that I would like to try, but keep reading because I give you the recipe & my recipe for stuffing or dressing for your Thanksgiving dinner. So I found this recipe in the news paper & the title was the New traditional turkey stuffing. So I looked it up online to find the website for the recipe.

1991 Cookoff Winner

10	White Castle hamburgers, no pickles
1 1/2 cups	celery, diced
1 1/4 tsp.	ground thyme
1 1/2 tsp.	ground sage
3/4 tsp.	coarsely ground black pepper
1/4 cup	chicken broth

In a large mixing bowl, tear the burgers into pieces and add diced celery and seasonings. Toss and add chicken broth. Toss well. Stuff cavity of turkey just before roasting. Makes about 9 cups (enough for a 10- to 12-pound turkey). Note: Allow 1 hamburger for each pound of turkey, which will be the equivalent of 3/4 cup of stuffing per pound.

Now for my dressing recipe:

This is my own recipe & you need to Mix spices to taste.

1 pan of cornbread (cooled & crumbled)

2 eggs

1 large onion diced

4 stalks of celery diced

3 cups turkey broth

3 tsp salt

2 tsp poultry seasoning

3 tsp sage

1 tsp black pepper

1 can mushrooms pieces

1 can oysters (optional)

Preheat oven to 350 degrees.

Mix cornbread, eggs, onion, celery, mushrooms, & oysters in a large bowl. Add broth to make mixture sloppy & add spices to taste. pour your mixture into a cake pan & bake covered for 1 hour checking occasionally to make sure it is not to dry. (If it gets to dry add some more turkey broth.) After 1 hour take the foil cover off the pan & bake 15 mins. to brown the top. Serve with your turkey & gravy.

Turkey Noodle Soup

With Halloween over we look forward to the next major holiday! Thanksgiving is coming up we all will have turkey. But

what do we do with it after that? Try making turkey noodle soup! A quick & easy recipe for this is in the cookbook Oodles & Oodles of Ramen Noodles.

Ingredients:

3 C. chicken broth

1 1/2 C. chopped cooked turkey

1 C. thinly sliced carrots

1 onion cut into thin wedges

1/2 C. thinly sliced celery

1 tsp. dried thyme

1 yellow summer squash, quartered lengthwise & sliced (about 1 1/2 C.)

2 (3oz.) pkgs. chicken flavor ramen noodles with 1 season pkg.

2 T. lemon juice

Direction:

In a large saucepan over medium heat, combine 2 1/4 C. water, broth, turkey, carrots, onion, celery & thyme. Bring mixture to a boil. Reduce heat; cover & simmer for 15 mins. Add squash & cook uncovered, for 7-9 mins. or until vegetables are nearly crisp tender. Add noodles & 1 pkg. of seasoning, ( save the other pkg of seasoning for another use.) Cook for 2 mins. Stir in the lemon juice & cook 1 min longer. or until noodles are tender.

Okay that is the way the book says but this is my way!

You start with the turkey bones & boil it down to get the meet off it. Add 1 pkg seasoning & thyme with this after you have removed all bones & skin you don’t want in your soup. This will give you your turkey & broth for your soup. Add the vegetable that you like in the soup & boil till tender. After the vegetables are down add noodles & the other seasoning pkg. Serve when ready.

Another take on this to make it quicker is you can use canned chicken & mixed canned vegetables. You can have homemade chicken noodle soup in a matter of mins. Making the family think you have cooked for hours.

Halloween Party Ideas

A safe alternative on Halloween is have a party. I like having a Halloween party with my kids rather than going out trick or treating. With my kids I let them invite kids over for a party instead of going trick or treating. Ask everyone to bring a bag of candy & have the adults divide it into equal bags for all the kids. The kids end up with as much candy as they want & more items that they like.

The first thing is to have your kids make a list I always invite all brothers & sisters this way the parents can make one stop with the family. We live out in the country so this is a very important step because you have more adults when they can stay with all the kids at one stop. Once you have a list go online & email, facebook or print out invitations. This will give you an idea of how many kids you will have.

For decorations I have a lot of decorations you can eat. to make a tootsie roll ghost, you take a tootsie roll pop cover with a tissue tie a string around the pop to make a head draw a face & hang it in a tree for ghost. The kids can make these in advance & all the kids will take one with them cleaning the tree for you. Another edible decoration is a spider web cake, bake you favorite cake in round cake pans, place icing on them with chocolate or a white color as normal . Then you will take the opposite color icing from your icing on the cake, & go around the top of the cake in circles starting at the center going out. Making your circles thin lines for this you will need a decorating bag or you can take a Ziploc bag & cut the tip off a corner. After you have the circles drawn take a kitchen knife starting in the center & pull to the edge making the web design. Take a small chocolate doughnut with pipe cleaners to make the spider. Don’t forget that the kids will need something to drink I use 1 can of orange colored drink, a 2 liter lime lime drink, sherbert your favorite flavor the colors make it & you will need eye balls to float in it to finish it off.

For games I keep it simply & I don’t make a schedule because the kids will make that as long as you give them something to do. My kids your big enough to play the game without adult supervision except for bobbing for apples. With this game you need to have adults around anytime you have kids & water. If you don’t want the kids to play in water then you can still bob for apples tie a string around the apple hang it & let the kids try to grab it in the mouth. This is harder to do, to make it easier you can hang them in front of a wall so they can wedge the apple against the wall & use smaller apples so they can get more in their mouth. Another game is pin the face on the pumpkin, easy to make the hardest if you cant draw is get a large pumpkin, (have the kids draw this & they are more into it). Next cut out face pieces & have the kids blind folded place the face on the pumpkin then take the picture of each child’s pumpkin they have made. You can have another child try to help them by telling them wear to put the face if you want them to see how it is to be blind.

Remember to have a Halloween movie playing & songs playing for them to enjoy. I always make a costume optional for 2 reason sometimes the parents can’t afford to go out & buy a costume for several kids & some kids don’t want to wear one. This has always been less work for me then going out trick or treating, then you have to worry about the safety while you are out with the kids, the safety of the candy in these times, unfortunately every year you hear about somebody doing something to candy. You get to spend the evening with your kids & there friends & get to know the parents of those friends if you don’t already know them.

Cantaloupe warning issued after Listeria outbreak

This is a warning about an Listeria outbreak. It has caused 4 deaths & has been found in 6 states. I would advice everyone that might have bought fruit from this area to read the link below. This can be very serious if you are elderly, very young, or sick. This could be caused from Cantaloupe but maybe not this is not the first time that one item was blamed for an outbreak when it wasn’t the cause.

I just want everyone to be safe if you get fruit from this area in Colorado PLEASE are doing fine. If you have any symptoms contact your Dr. or ER dept. to be checked out. We don’t need anymore illnesses with this disease.

Cantaloupe warning issued after Listeria outbreak.

DENVER – Health officials have issued a warning for cantaloupes from a revered melon-producing area of the U.S. state of Colorado amid a bacteria outbreak blamed for four deaths Colorado and New Mexico.

The warning from the Centers for Disease Control and Prevention came after numerous cases of a strain of Listeria were reported in six states, including at least 11 from Colorado, 10 from New Mexico, two from Texas, and one each from Indiana, Nebraska and Oklahoma.

Colorado Agriculture Commissioner John Salazar said the contamination might not be the cantaloupes, but a truck or other source. But several Colorado grocery chains pulled their supplies as a precaution, and New Mexico issued a voluntary recall.

Double Chocolate Dutch Oven Cake

We had this double chocolate dutch oven cake at our last Boy scout camp out & it was delicious. I thought I would share it with everyone so you can enjoy it also. This was a great way to end the day with a delightful dessert their was none left. If you are looking for a great dessert for you next campout or cookout try this cake you won’t be let down.

The recipe calls for:

1 1/2 cup water
1/4 cup cocoa
1 cup light brown sugar
1 (10 oz.) bag mini marshmallows
1 chocolate cake mix (mix as directed)
6 oz. semi-sweet chocolate chips

Line the bottom and sides of a 12″ Dutch oven with heavy foil. Mix the water, cocoa powder, and brown sugar together and pour into the Dutch oven. Add marshmallows and spread them out evenly. Pour prepared chocolate cake mix over marshmallows. Sprinkle chocolate chips over cake batter.

Cover oven and bake using 8-10 briquettes bottom and 14-16 briquettes top for 60 minutes.
